OK... Take this poll...
Now, everyone knows what Carrott cake is...
Jello Cake is regular cake that is baked... allowed to cool a little.. then you poke holes in it with a fork and pour Jello over the top.. the jello soaks in through the holes and you put it in the fridge where it hardens up and you have 1/2 cake and 1/2 jello filled cake :-D
Oh, and you put cool whip over the top of it :-D

Ooh, I see a couple of people have already suggested cheesecakes. Mmmm, my favourite. :) Apparently they're pretty easy to make, too. Here are some fairly simple recipes I found:

Best No-Bake Cheesecake
New York Cheesecake

Mmmm. *gurgle* As long as you know how to make the base, you can put on whatever toppings you'd like; cherries, chocolate fudge, mixed fruits, you name it! I'm actually tempted to give this recipe a try myself!

Good luck preparing for the dinner. And remember, as this is a very special occasion it's ok to go all out! :)

Blargh, jello. >__< My best friend, Meggie, was a jello freak as a little kid. :) She ate, like, four cupfuls one after another at one of my birthday parties! *lol*

jello cake sounds just awful. but i'm one of few people in this country who hates jello.
i prefer the carrot cake.
you could also go with something like an ice cream dessert that wouldn't involve you baking, like Breyers Viennetta. but save that for the second dinner, cause i know you really want to bake something nice.
godiva ice cream and big homemade brownies are nice too. with hot fudge syrup and cherries and all that good stuff.
i would have put that in the poll, but i just thought of it now.

good luck with everything. it will go just fine. and if you do use the candles, be careful and don't be nervous around the flames!!

I didn't feel like doing the poll, but i'd say go with the jell-o cake. You already know how to make that so there is no reason for that to end up as a disaster, plus Jacinda should like it. Not to mention if all else fails at least you guys will have cake. Just relax, have a great time and be yourself! And it sounds like everything will turn out good. Have fun.

(and as a side note: Jell-o Cake is the BEST!!!!!)
